I remember a patient who was puzzled diet because I was gaining weight. He said he was eating a low fat cake. When I asked how, he replied: "One or two pieces?" "No, one or two cakes!"
An ideal diet is low in fat and low sugar. Most people can enjoy sugar, high fat is sometimes, but if you enjoy a day is sure to eat healthier the next.
2. Canned fruits and vegetables NO nutritious: They can be. The results of recent studies have shown that nutrients are generally similar in comparable fresh, canned and frozen vegetables.

Gazpacho with croutons
Serves four. Per serving: 250 calories, 5 g fat, 1 g saturated fat, 6 g fiber, 8 grams protein, 730 mg sodium, 46 g carbohydrate.
½ cup red onion coarsely chopped
1 clove garlic, peeled
8 medium tomatoes
½ cup seasoned dry breadcrumbs
½ cup chopped parsley
3 Tbsp. red wine vinegar
1 tbsp. olive oil
½ TBS. salt
½ tbsp. pepper
2 cucumbers, peeled and chopped
Homemade croutons or purchased
1. Beat onion and garlic in blender. Add half of tomatoes. Mashed. Add next 6 ingredients. Blend. Pour into a glass container.
2. Cut the remaining tomatoes. Stir in mashed with half the cucumber and half of red and green peppers. Refrigerate for 1 hour. Ladle into bowls. Top with cucumber and the remaining peppers. Garnish with croutons. Makes 4 servings.
